Seasons of My Heart Cooking School at Rancho Aurora offers day classes, long weekend classes, week-long courses, local market tours, artisan culinary experiences, and culinary tours to regions of Oaxaca and other regions of Mexico. Our hands-on classes and tours focus on pre-Hispanic foods, traditional culinary, medicinal and spiritual herb usage, as well as Spanish influences on the contemporary Oaxacan kitchen. Classes are combined with market tours and demonstrations in local homes and cottage industries to immerse students in Mexican culture.

About Susana Trilling Susana has been a chef, caterer, author and food consultant and owner of New York City restaurants Bon Temps Rouler and Rick's Lounge. She began her formal study of Mexican cooking in 1977 and has been in Oaxaca since 1988. Her book, Seasons of My Heart; A Culinary Journey Through Oaxaca, Mexico, was published in 1999 and accompanied by a 13-part PBS television series. She is also author of My Search for the Seventh Mole, A Story with Recipes.
